This fantastic cookery course with top chef Mike Robinson will introduce you to the art of game cookery. You’ll become confident in preparing fantastic meals and learn to smoke, cure and preserve pheasant, rabbit and other game food.

 

What Your Experience Includes
These introductory courses are the perfect way to be introduced to game cookery, with friendly chef Mike Robinson to show you the way. You’ll learn about country life too as you see how easy it is to prepare and cook wild food. Mike has designed 3 different cookery courses for you to choose: Essential Game, Advanced Game and Smoking, Curing & Preserving. Whether you’re a beginner or more experienced cook you’ll learn something new!

The Essential Game class teaches you to prepare a Venison carcass, plus Pheasants and Rabbits. Skinning and butchering has never been so east. Discover quick methods of preparing a Pheasant without the hassle of plucking as well as fast ways to skin a wild Rabbit. Then cook your selection of Mike’s choice game recipes and learn more vital practical techniques. This day of game cookery includes tips, ideas and advice so you’ll leave feeling confident about experiment with cooking game at home. Your day of culinary activity ends with a delicious feast in the dining room.

  The Advanced Game course is for chefs already familiar with cooking game meat. The focus is on restaurant style cooking, so you’ll learn to make beautiful terrines, unctuous stocks, pates, melt-in-your-mouth braised stews and how to present your dishes for the essential wow factor. A sumptuous lunch follows, cooked by you and washed down with a few glasses of great wine.

Smoking, Curing & Preserving teaches you how to cure, pickle and preserve meat as well as fish and vegetables. The course also teaches you to smoke food quickly at home to create naturally preserved ingredients. This simple art will transform wild food into something quite magical. You will also sample the exquisite food you have cooked or prepared on the course. Mike endeavours to be there for all of the courses, but this is not always possible. Please check when booking if this is important to you.

Restrictions

• Courses usually start at 10.00am and finish at approximately 4.30pm.
• Most courses run once a month and others bi-monthly, please check this with the supplier at the time of booking. 
• Courses usually operate on Fridays or Saturdays subject to availability.
• There is no minimum age restriction but under 18’s must be accompanied by a paying adult.
• Disabled access is available although the toilets may be difficult and the work surfaces are built for standing. Please discuss this with the supplier at the time of booking for further information.
• You should be able to stand for a long period of time, however should you require a tall stool please request this when booking a date for your experience.
• Unfortunately this experience is not suitable for spectators.
• The experience content, equipment used and restrictions may vary. Please check with the venue when booking.
