This fantastic cookery course with top chef Mike Robinson will introduce you to the art of game cookery. Choose from 3 courses (Essential Game, Advanced Game, Smoking, Curing and Preserving) and become confident in preparing game food.

TV chef Mike Robinson is famous for his knowledge of game and his techniques in preparation and cooking. This course sees him help you to become confident and skilled in preparing fantastic meals including pheasant and rabbit.

Mike has designed three different cookery courses for you to choose from: ‘Essential Game’, ‘Advanced Game’ and ‘Smoking, Curing and Preserving’. The variety is to cover all kinds of interests and experience levels.

The Essential Game class teaches you how to prepare a Venison carcass, plus pheasants and rabbits. The Advanced Game course is for chefs already familiar in the kitchen and the emphasis is on restaurant methods. Smoking, Curing & Preserving teaches you how to cure, pickle and preserve meat as well as fish and vegetables. It also teaches you how to make effective stocks.

All courses include a choice of soft drinks or wine and you will get to sample some of the food at the end of day feast. Each participant will also receive a free hand-out with recipes from the day’s cooking.


  • Essential Game: Learn to skin and butcher Venison, Rabbits and Pheasant. Learn quick ways prepare a pheasant as well as the fast way to skin a rabbit. Cook a range of Mike's game recipes and learn vital techniques in the process. The finale is a feast in the dining room.
  • Advanced Game: Aimed at those who are more familiar with game meat. Learn a more restaurant style of cooking and presentation, make stocks, pates, terrines and braised stews. Enjoy lunch cooked by you and wash it down with a few glasses of wine.
  • Smoking, Curing and Preserving: Learn how to cure, pickle and preserve meat, fish and vegetables. Find out how to smoke food efficiently at home to preserve the natural goodness of the ingredients.
  • Sample some of the food prepared during the course.
  • Soft drinks and wine are included.
  • Take home a free recipe handout .
  • Mike Robinson endeavours to be present at each course though this is not always possible - please check when booking if this is important to you.

Notes and Restrictions

  • Voucher valid for 9 months.
  • Runs 10.00am to 4.30pm.
  • Available either once a month or bi-monthly.
  • Courses usually run Fridays or Saturdays.
  • Under 18’s must be accompanied by a participating adult.
  • Disabled access is available but toilets may be difficult and work surfaces are built for standing.
  • Stools are available on request if you can't stand for long periods.
  • No spectators.
